ingredients
* 24 ounces, chicken, quartered
* 1/4 cup finely chopped onion
* 2 cloves garlic, crushed
* 1/4 cup shortening or butter
* 1 cup finely chopped fresh coriander
* 1 teaspoon salt, as desired
* 1 1/2 cups water
* 1/2 teaspoon ground black pepper, as desired
* Sauce (shakshouka):
o 24 ounces tomatoes, peeled and finely chopped
o 24 ounces green bell peppers, grilled, peeled, finely chopped
o 1 cup finely chopped parsley
o 1 cup finely chopped coriander
o 4 cloves garlic, crushed with a dash of salt
o 1/2 teaspoon ground chili, as desired
o 1/2 teaspoon ground cumin
o 1/2 teaspoon ground allspice, as desired
o 1 teaspoon salt, as desired
o 1/2 teaspoon ground black pepper, as desired
making chicken with paprika
* Fry onions with shortening in a pot over medium heat.
* Add chicken, coriander, garlic, salt, black pepper and water.
* Stir, cover and cook for 45 minutes or till tender.
* Sauce:
o Mix green pepper, tomatoes, garlic, coriander and parsley.
o Fry, stirring, over medium heat for 30 minutes.
o Add allspice, black pepper, salt, cumin and chili.
o Bring to a boil.
o Cook till thick.
* Serve fried chicken with sauce.
